Planning for the 1960's Gitane

I'm still working on cleaning up components and the frame on the 60's Gitane I picked up a couple of weeks ago. While it would be nice to do this as close to specs from the time budget constraints won't allow me to do that - at least for now. Too many activities with the kids right now.

I do have a Simplex SX630 long cage rear derailleur, SJA102 front derailleur, Simplex SJA levers. I'll re-use the Pivo stem and have steel/chrome handlebars I can use. Wheelset will be Maillard helicomatic - 13-28 on Weinmann rims (27"). Combine that with the Nervar 52-36 crankset and it should tackle just about any hill.

Here's my question. The frame had some Mafac centerpulls and brake levers (with suicide bars - I've taken those off). However, I also have two sets of Dia Compe 610 center pulls and levers that are a little nicer - is there much of a difference between the two. Or does it really matter. What would you put on it for brakes?

Other than figuring that out all I will need to get is a better seat post and a saddle - was thinking an Avocet Touring.
